Max’s Restaurant traces its roots back to 1945, shortly after World War II, when Maximo Gimenez, a Stanford-educated teacher, befriended American occupation troops in Quezon City. The troops frequently visited his home for drinks, eventually encouraging Maximo to open a café. Serving chicken, steak, and drinks, the café gained fame when Maximo’s niece, Ruby, created a special fried chicken recipe that became an instant hit with both the troops and the local Filipino community.
Over the decades, Max’s Restaurant earned the nickname “the house that fried chicken built” and expanded its presence internationally. Today, the brand operates more than 200 locations across the Philippines, the US, Canada, UAE, Qatar, Singapore, and Guam, delighting generations with its signature home-style Filipino cuisine.
